   Chill a hurricane glass and prepare enough fresh crushed ice to fill it completely.

   Measure the aged rum, amontillado sherry, pineapple juice, cream of coconut, and Jamaican jerk bitters into a shaker.

   Add a few pieces of crushed ice and whip-shake briefly, leaving out the overproof rum.

   Dump the whipped mixture and its ice into the chilled hurricane glass.

   Fill to the top with fresh crushed ice, then carefully float the overproof rum across the surface.

   Omit the optional banana leaf, keep the float undisturbed, and serve immediately.
