   Chill a large cocktail glass and a separate small serving glass for the Champagne.

   Cut a passion fruit in half, reserve one neat half for garnish, and measure the puree.

   Add the vanilla vodka, passion fruit liqueur, passion fruit puree, and vanilla sugar to a shaker.

   Fill the shaker two-thirds with fresh ice and shake hard for 12–15 seconds until thoroughly chilled.

   Double-strain into the chilled cocktail glass to remove coarse ice and excess seeds.

   Set the passion fruit half on the surface, dust it lightly with vanilla sugar, and pour the cold Champagne into the separate side glass.
