   Chill the wine thoroughly and prepare the Three aromatic bitters drops on the foam before mixing.

   Measure pisco, lemon juice, simple syrup, egg white, aromatic bitters accurately and add them to a clean cocktail shaker.

   Fill the shaker about three-quarters full with solid ice cubes and seal it firmly.

   Shake vigorously to fully emulsify the egg white, then fine-strain and place the bitters neatly on the foam.

   Fine-strain into the chilled wine so no small ice fragments reach the drink.

   Finish with Three aromatic bitters drops on the foam and serve immediately while very cold.
