   Pre-chill one clear coupe, wash two passion fruits, and cut them cleanly in half.

   Scoop the flesh and seeds from three passion-fruit halves into a shaker, reserving one intact half for garnish.

   Add 60 ml light gold aged rum, 15 ml freshly squeezed lime juice, and 15 ml rich simple syrup.

   Fill the shaker about three-quarters full with solid cold ice, seal it, and shake hard for 10–12 seconds.

   Fine-strain into the chilled coupe so the drink is smooth and free of seeds and ice fragments.

   Float the single reserved passion-fruit half cut-side up at the center and serve without another garnish.
