   Chill a coupe, cut one short orange twist, and measure six small drops of orange flower water rather than full dashes.

   Add the gin, lemon juice, egg white, orgeat, and measured orange flower water to a shaker.

   Add solid ice and shake hard for 12–15 seconds, then strain the entire mixture back into the empty shaker.

   Shake again without ice for 15–20 seconds to create a fine, stable foam.

   Fine-strain into the chilled coupe and allow the foam to settle into a smooth, level cap.

   Express the orange twist lightly over the surface, place it neatly at the rim, and serve.
