1. 01

   Chill a chilled highball and prepare lemon wheel.

   Measure 45 ml gin, 30 ml fresh lemon juice, 15 ml simple syrup into a clean shaker.

   Fill the shaker two-thirds full with large, fresh ice cubes and seal it firmly.

   Shake hard for 10–15 seconds, until the outside of the shaker is frosted.

   Strain over fresh ice, top slowly with 60 ml soda water, and stir once.

   Add lemon wheel neatly and serve immediately.
