   Chill a coupe and select twelve fresh basil leaves.

   Measure the lightly aged white rum, apple cider, fresh lime juice, egg white, passion-fruit syrup, rich syrup, and basil into a shaker without ice.

   Dry-shake vigorously for about 10 seconds to emulsify the egg white and extract the basil aroma.

   Add solid ice and shake hard again for 12–15 seconds until very cold.

   Double-strain into the chilled coupe to remove every herb fragment and form a thin foam.

   Allow the foam to settle briefly and serve without garnish.
