   Chill a rocks glass and prepare fresh ice for serving.

   Add 60 ml bourbon, 30 ml lemon juice, 20 ml simple syrup, and the optional 20 ml egg white to an empty shaker.

   If using egg white, seal the shaker and shake without ice for 10–15 seconds to create foam; otherwise continue.

   Add ice until the shaker is about two-thirds full and shake vigorously for another 12–15 seconds.

   Fill the chilled rocks glass with fresh ice and fine-strain the Whiskey Sour over it.

   If using Angostura bitters, place the 3 dashes over the foam or surface of the drink.

   Serve immediately while the drink is cold and the foam is fresh.
