   Pre-chill one clear coupe, wash two ripe passion fruits, and cut both fruits cleanly in half.

   Scoop the flesh and seeds from three passion-fruit halves into a shaker, reserving one neat intact half for garnish.

   Add 60 ml cloudy unsweetened apple juice, 15 ml freshly squeezed lime juice, and 15 ml passion-fruit syrup.

   Fill the shaker about three-quarters full with solid cold ice, seal it, and shake hard for 10–12 seconds.

   Fine-strain into the chilled coupe so no seeds, pulp, or small ice fragments reach the drink.

   Float the single reserved passion-fruit half cut-side up on the surface and serve without another garnish.
