   Pre-chill a clear highball glass and prepare one short plain wooden stirrer for service.

   Cut half a ripe lime pole-to-pole, remove the central white core, and chop it into six to eight small chunks.

   Drop the lime chunks into a shaker base, add the rich syrup, and muddle firmly until the juice and oils are fully extracted.

   Add the chilled fino sherry and briefly stir it through the muddled lime mixture.

   Pour the entire mixture, including lime pieces, into the chilled highball and fill with small cubes or cracked ice.

   Stir briefly, top with more cracked ice, add the single short plain wooden stirrer, and serve without a straw.
