   Pre-chill a clear coupe and cut exactly one very short narrow strip of fresh lemon zest.

   Measure the fino sherry, amontillado sherry, unaged rhum agricole, peach liqueur, and peach bitters into a mixing glass.

   Fill the mixing glass with solid cold ice and place a bar spoon against the inner wall.

   Stir smoothly for 20–25 seconds until the sherry-led mixture is very cold and properly diluted.
