   Chill the coupe thoroughly, prepare the One small pineapple wedge, and ready the shaker.

   Measure gin, sweet vermouth, pineapple juice, grenadine, egg white, pineapple accurately and add them to a clean cocktail shaker.

   Fill the shaker about three-quarters full with solid ice cubes and seal it firmly.

   Pre-chill a coupe, add the gin, sweet vermouth, pineapple juice, grenadine, and egg white to an empty shaker and dry-shake hard for about 10 seconds, add solid ice and shake again for 10–15 seconds until very cold, fine-strain into the chilled coupe, allow the compact pale-pink foam cap to settle, then add exactly one small pineapple wedge at the rim.

   Fine-strain into the chilled coupe so no small ice fragments reach the drink.
