   Chill a coupe glass, chill the soda water separately, and keep it out of the shaker.

   Add the blended Scotch, lemon juice, egg white, dry curaçao, and sugar to an empty shaker.

   Dry-shake without ice for 10–15 seconds to dissolve the sugar and begin building foam.

   Add solid ice, reseal, and shake hard for another 10–15 seconds until very cold.

   Fine-strain into the chilled coupe, then slowly add the cold soda water down the inside edge of the glass.

   Allow the foam to settle, leave ungarnished, and serve immediately without stirring again.
