Garnish: Orange slice

1. 01

   Chill a large wine glass, then fill it generously with medium or large ice cubes.

   Pour 90 ml cold Prosecco over the ice first to help preserve its bubbles.

   Add 60 ml Aperol slowly so it mixes through the wine without knocking out too much carbonation.

   Top with 30 ml cold soda water, pouring it gently down the inside of the glass.

   Lift the ice once or twice with a bar spoon; do not stir continuously or the drink will lose bubbles.

6. 06

   Add the optional orange slice between the ice and the glass, then serve immediately.
