   Chill a rocks glass and prepare enough fresh ice to fill it before serving.

   Add 45 ml amaretto, 20 ml bourbon, 30 ml lemon juice, 10 ml simple syrup, and the optional 15 ml egg white to an empty shaker.

   If using egg white, seal the shaker and shake without ice for 10–15 seconds to build a smooth foam; otherwise continue to the next step.

   Fill the shaker about two-thirds with ice and shake vigorously for 12–15 seconds, until the outside feels very cold.

   Fill the chilled rocks glass with fresh ice, then fine-strain the cocktail over it.

   If using Angostura bitters, place the 3 dashes over the foam and serve immediately.
