1. 01

   Chill a coupe thoroughly and prepare a fine strainer for a clean finish.

   Measure the mezcal, rose aperitif wine, shiso liqueur, watermelon syrup, and fresh lime juice into a shaker.

   Add one dash of absinthe and fill the shaker with solid ice.

   Shake firmly until the tin is very cold and the watermelon syrup is fully integrated.

   Double strain through a fine strainer into the chilled coupe to remove ice and fruit sediment.

   Check that the rim is clean and serve immediately with no garnish.
