   Pre-chill a heavy rocks glass, prepare one large clear serving cube, and reserve exactly one small dark-red cocktail cherry.

   Measure the palo cortado sherry, fresh lemon juice, rich syrup, and pasteurized egg white into a shaker.

   Fill the shaker with solid cold ice and shake vigorously until thoroughly chilled.

   Strain the mixture back into the empty shaker and dry-shake without ice to build a smooth restrained foam.

   Place the large fresh cube in the chilled rocks glass and fine-strain the cocktail over it.
